CHEESE BLINTZES 
2 loaves white bread (fresh)
1 lb. cream cheese (16 oz.)
2 egg yolks
1/2 c. sugar
3/4 c. melted butter
1 c. sugar
2-3 tsp. cinnamon

Cream egg yolks, sugar and cheese together. Remove crust from bread. Roll bread slices thin with rolling pin. Spread cheese mixture over bread slices and roll up. Dip in melted butter and roll in sugar and cinnamon mixture. Freeze. Take out of freezer about 1/2 hour before serving, cut in half after thawing 15 minutes. Put on ungreased cookie sheet and bake at 400 degrees for 15 minutes. Serve hot or cold. About 36 pieces. Great for brunches.
