CHEESE BLINTZES 
3 eggs
4 tbsp. flour
1/2 c. water
Pinch salt

FILLING:

1 lb. dry cottage cheese
2 eggs
2 tbsp. sugar
Dash cinnamon

Mix batter ingredients together to make thin batter. Pour 2-3 tablespoons into greased fry pan turning pan quickly so that batter covers whole area and makes thin pancake. Fry until brown on bottom only.

Mix filling ingredients together. Place a quantity of filling in center of each pancake. Roll and fold ends under. Fry again until brown on both sides. Serve with sour cream.
