EASY CHEESE BLINTZES 
1 (2 lb.) loaf thin sliced sandwich bread, crusts removed
2 (8 oz.) pkgs. cream cheese, softened
2 egg yolks
1/2 c. sugar
1 c. sugar
1 c. butter, melted
3-4 tsp. cinnamon

NOTE: Must be frozen before cooking.

Cream together cream cheese, egg yolks and 1/2 cup sugar. Mix 1 cup sugar and cinnamon. Roll each slice of bread fairly flat with rolling pin. Spread each with cheese mixture. Roll up jelly roll fashion. Dip in melted butter and roll in cinnamon and sugar mixture. Place on waxed paper lined cookie sheet and freeze. When frozen cut in half and store in plastic bag in freezer. To serve, take out of freezer and defrost for 30 minutes on cookie sheet. Bake at 400 degrees for 15 minutes.
