CHEESE BLINTZES 
3 lg. eggs
3/4 c. sifted flour
1 tbsp. sugar
1/4 tsp. salt
1 tsp. vanilla
2 tsp. butter, melted
1 c. cold water and milk, mixed
1 lb. Farmer cheese
1/4 tsp. salt
1/4 c. sugar
Grated rind of orange
Extra butter

Beat eggs to combine yolks and whites. Beat in 1/2 cup flour until smooth. Add remaining 1/4 cup flour, sugar, salt, and vanilla. Beat just until smooth. Gradually stir in milk and water. Stir in melted butter. Mix cheese with salt, sugar and orange rind. Melt about 1/2 teaspoon butter in 8 inch skillet. Pour several tablespoons of pancake mixture. Swish so batter covers bottom of pan. Cook until lightly browned on bottom. Turn pancake out on board. Continue making pancakes, adding a little butter each time. Put generous spoonful of cheese mixture in center of pancake. Fold. Fry in butter. Brown on both sides. Serve with jam or sour cream.
