TONKATUS 
8 pieces pork cutlets, thin slices
2 eggs, beaten
1 c. Panko (1 pkg. bread crumbs)
1 1/4 c. flour
Salt and pepper to taste
2 c. oil

Slit outside edges of pork cutlets around 1/4 inch around. Garnish salt and pepper, let set for 5 minutes. Flour pork, dip in eggs, then roll in panko. Fry pork in oil over medium heat for about 5 minutes on each side or until golden brown. Serve with tonkatsu sauce and green vegetables. Makes 4 servings.
