MARZIPAN BAR
Pie pastry for one 8-inch pie
Raspberry jam
1/2 c. butter
2/3 c. granulated sugar
2 eggs
2/3 c. rice flour
1/4 tsp. salt
Red and green food coloring

FROSTING:

2 tbsp. butter
2 tbsp. warm milk
1 1/2 c. powdered sugar
1 tsp. almond flavoring

Make your favorite pie dough or use refrigerated dough. Line the bottom of an 8-inch-square ungreased pan with the pastry. Spread a layer of jam over the uncooked pastry base.

Blend 1/2 cup butter and 2/3 cup granulated sugar with a mixer. Add eggs and beat until fluffy. Add rice flour (available at Oriental food stores), and salt and beat well until mixed.

Divide the sugar mixture into 2 bowls. Color half the mixture a pale green and the other half pale pink.

Put tablespoons full of each mixture alternately on the jam to cover. Spread gently with a knife just enough to have each touch. Don't over-spread.

Bake in a 350 degree oven for 30 to 35 minutes. Cool.

Combine frosting ingredients and beat thoroughly. Add more sugar to thicken if needed. Spread on cooled pastry, and cut into bars.
