PANTUCKET FINGERS | |
1/2 c. butter 2 squares Bakers chocolate 3 eggs 1 c. sugar 3/4 c. flour 1/2 tsp. baking powder 1 c. chopped walnuts 1/2 c. shredded coconut Melt butter and chocolate. Add slightly beaten eggs and sugar. Sift dry ingredients. Add to chocolate mixture. Add nuts, chocolate and vanilla. Bake 20 minutes in a 350 degree oven on a greased cookie sheet. FROSTING: 2 squares Bakers chocolate 4 tbsp. strong coffee 1 tbsp. butter 1 tsp. vanilla Pinch of salt Confectioners' sugar Melt chocolate and butter. Add strong coffee and salt. Mix in vanilla and enough confectioners' sugar to sweeten and thicken. Spread on Pantuckets while warm. |
