SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar
2 tsp. vanilla
2 c. coarsely grated zucchini
1 can well drained, crushed pineapple
3 c. flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. baking powder
3/4 tsp. nutmeg
1 c. chopped nuts
1 c. raisins or currants
Few chopped maraschino cherries

With rotary mixer, beat eggs to blend. Add salad oil, sugar and vanilla. Continue until thick and foamy. With a spoon stir in zucchini. Gently stir in other ingredients just until blended. Pour into 2 loaf pans, greased and floured. Bake 350 degrees for 1 hour or until toothpick comes out clean. Cool in pans 10 minutes.
