SWEET POTATO SOUFFLE 
3 cups sweet potatoes, cooked and mashed
1/ tsp. salt
1/3 stick of butter. melted
1 tsp. vanilla
1/2 cup milk
1 cup sugar
2 eggs, slightly beaten
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. orange juice (optional)

Mix all ingredients in large bowl. Pour into a greased 13 x 9 baking dish. Cover with topping mixture.

Bake at 350 for 35 minutes.

Topping:

1/2 stick of butter
1 cup of brown sugar
1/3 cup of flour
1 tsp. cinnamon
1 cup of chopped pecans

Combine all ingredients and stir well.
