SPECIAL SWEET POTATO SOUFFL 
3 c. mashed sweet potatoes (3 or 4 large sweet potatoes)
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. pet milk (whole milk will work)
1/2 c. butter

Topping:

1 c. brown sugar
1/3 c. flour
1 c. chopped walnuts or pecans
1/3 c. butter

Peel, slice sweet potatoes. In large saucepan add enough water to cover potatoes. Boil until tender, drain and mash with electric mixer.

Add sugar, eggs, vanilla, milk and butter, beat until smooth. Pour into a 8 x 12 (2 qt) casserole dish.

For topping: with a fork, blend brown sugar, flour, butter and chopped nuts. Sprinkle on top of potatoes.

Bake at 350°F for 45 minutes.

Serves 6 to 8.
