ZUCCHINI PAN COOKIES | |
1 c. grated zucchini 1 tsp. baking soda 1 tsp. salt 1 tsp. pumpkin spices 2 c. all-purpose flour 1 c. butter 3/4 c. sugar 3/4 c. brown sugar (firmly packed) 2 eggs, beaten 1/2 tsp. vanilla 1 c. raisins or nuts (chopped or ground) (or 1/2 c. each) Preheat oven to 375 degrees. Cream butter, sugars and eggs. Add vanilla. Sift and stir together flour, salt, baking soda and spices, gradually add to creamed mixture. Fold in raisins, nuts and zucchini. Pour in greased oblong pan (15 1/2 x 10 1/2 x 1 inch). Bake for 25 minutes. Cool in pan for 15 minutes and cut in squares. |
