SALMON PATTIES 
1 (15 1/2 oz.) can pink or red salmon, drained
1/2 c. onion, minced
10 saltine crackers, crushed
1 egg
2 tbsp. butter

In a bowl, combine the salmon, onion, crackers and egg. Mix to bind well. Melt the butter in a skillet. Shape the salmon mixture into patties and fry until lightly browned. Cool and wrap in aluminum foil. These patties freeze well.
