“FRENCH DRESSING” IS IN:

FRENCH DRESSING 
1/2 tsp. sea salt
1/4 tsp. black pepper
2 tbsp. cider or red wine vinegar
1/2 tsp. dry mustard (optional)
1/2 tsp. sugar (optional)
1 tsp. chopped garlic (optional)
1 tsp. favorite herbs such as basil, oregano, thyme, rosemary (optional)
1 tsp. onion juice (from a grated onion)
6 tbsp. extra virgin olive oil

Skip the expensive bottled dressing at the supermarket and save yourself from that long list of ingredients that you can't pronounce! Using a good quality olive oil and vinegar will make all the difference when you prepare your own salad dressing.

Combine ingredients either in a glass jar or in a blender or food processor. Shake in jar or process in blender to a puree. A blender is the best option if you're preparing this dressing using fresh herbs, onions and garlic because it eliminates the need for chopping, but a basic version may be prepared using nothing more than a glass jar for shaking to combine the olive oil and mustard.

Store in glass jar in refrigerator for up to 2 weeks.

Recipe may be doubled or tripled.

To make a Catalina style dressing, add 1 tablespoon of tomato puree or 1/4 cup diced ripe tomatoes.
