ORANGE POPPYSEED MUFFINS 
2 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. butter
2 tbsp. orange rind, grated
1 2/3 c. sugar
3 eggs
1 tsp. vanilla
1/2 c. orange juice
3 tbsp. poppy seeds

Cream butter and sugar. Add eggs, vanilla, orange juice and rind. Lightly stir liquid into flour mixture. Stir just enough to moisten. (Batter will be lumpy.) Fill tins or paper liners 2/3 full. Bake at 350 degrees for 15 to 20 minutes. Makes 18 to 24 muffins.
