GERMAN APPLE CAKE 
3 eggs
1 c. vegetable oil
2 c. sugar
1 tsp. vanilla
4 c. apples, peeled & sliced thin
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 c. nuts, chopped

CREAM CHEESE FROSTING:

Mix and spread on baked cake. 3 tbsp. butter 2 c. powdered sugar 3/4 tsp. vanilla

Beat eggs and oil until frothy. Add sugar and vanilla. Sift all dry ingredients, add apples and nuts, a cup at a time and fold in. Bake in 9 x 13 inch greased and floured pan at 350 degrees for approximately 40 minutes or until tested done. Cool and frost with Cream Cheese Frosting.

This cake tastes better after the first day and terrific by 2nd and 3rd day.
