GERMAN APPLE CAKE & ICING 
3 eggs
2 c. sugar
2 tsp. cinnamon
1 c. salad oil
1 tsp. vanilla
1/2 tsp. salt
4 c. raw apples
2 c. flour
1 tsp. baking soda

Beat eggs; add oil, sugar, vanilla and apples. Blend with flour, cinnamon, salt and soda. Bake in a greased 9 x 12 inch pan for 50 minutes at 350 degrees. This cake freezes well either plain or iced.

GERMAN APPLE CAKE ICING:

8 oz. cream cheese
1/2 stick butter
1 box xxx sugar
1 tsp. vanilla
1/2 c. chopped nuts

Cream cheese with butter. Add sugar, vanilla and nuts, mix well. (I put 1/2 cup nuts on top of icing also I put nuts in the cake batter.)
