RHUBARB CAKE 
1/2 c. shortening
1 c. sugar
1/4 c. brown sugar
1 egg
1 tsp. vanilla
3 c. rhubarb or apples, diced
2 1/4 c. flour
1 tsp. baking soda

Put in greased and floured pan. Top with 3 tablespoons sugar and 1 teaspoon cinnamon. Bake at 350 degrees for 35 minutes.
