DAVID'S MEXICAN TATER TOT
CASSEROLE
 
1 lb. ground beef or turkey
1 env. taco seasoning mix
1 (15 oz.) can pinto beans, rinsed and drained
1 (11 oz.) can Mexicorn, drained (Green Giant)
1 (10 oz.) can cheddar cheese soup
1 bag tater tots (enough to cover)

Brown ground beef, drain off fat. Mix in Taco seasoning mix. Add a little water to moisten, if needed. Place meat mixture in a 2-quart casserole dish.

Layer the pinto beans on top of meat mixture, followed by the Mexicorn.

Spread the cheddar cheese soup on top of the beans and corn. Top with tater tots in single layer.

Bake uncovered, at 400°F for 30 minutes or until tater tots are browned and crispy.

This recipe came out great. The flavors blend together so well and the tater tots add a nice crunch on top. I served mine with some sour cream, avocado, and hot sauce for an extra kick.
