POTATO KUGEL 
3 lbs. potatoes
1 onion
1 oz. matzo meal
3 eggs, lightly beaten
2 tbsp. oil
1 tsp. salt
Pinch of pepper

Grate potatoes and squeeze to remove as much water as possible. Grate onion. If using food processor, add all ingredients and process for 15 seconds. By hand, mix potatoes and onions. Add eggs and oil. Then add matzo meal and seasoning. Turn mixture into a well greased casserole or deep tray and cover with greased foil. Bake for about 1 1/2 hours at 400 degrees until golden.
