POTATO CARROT KUGEL 
1 c. grated carrots
2 tbsp. chopped onion
3/4 c. vegetable stock or water
1/4 c. butter
3 c. grated potatoes
2 eggs, separated
1/4 c. whole wheat flour
1/4 c. raw wheat germ
Pinch of pepper
Dash of garlic
1 1/2 tsp. salt
1 tsp. baking powder

Preheat oven to 300 degrees. Cook carrots and onion in stock and butter for several minutes, until tender. Grate potatoes and add immediately. Remove from heat and stir in beaten egg yolks.

Mix together the flour, wheat germ, baking powder, and seasonings and add to vegetables. Beat egg whites stiff and fold into vegetable mixture. Pour into a greased baking dish and bake for 1 hour. Serves 4 to 6.
