TABBOULEH 
1/2 c. uncooked brown rice
3/4 c. boiling water
2 bunches of parsley, chopped
1 bunch green onion, chopped
1 1/2 c. diced tomatoes
1 tbsp. dried mint flakes
1 lemon, juiced
1 recipe Lemon Garlic Dressing (see below)

Cook rice in boiling water, covered, for 5 minutes; drain. Combine all ingredients and refrigerate overnight before serving.

LEMON GARLIC DRESSING:

3 tbsp. lemon juice
3 tbsp. water
1 tbsp. minced parsley
1/2 tsp. grated lemon peel
1/2 tsp. dry mustard
1/2 tsp. sugar
1/2 tsp. seasoned salt
1/2 tsp. garlic powder
1/4 tsp. turmeric
Dash of pepper
2/3 c. salad oil

Combine all ingredients, except oil, in a jar; shake well. Add oil and shake 30 seconds. Refrigerate several hours before serving. Makes 1 cup.
