RED PUMPKIN PIE 
2 c. pumpkin
1 c. sugar
3 tbsp. flour
Pinch salt
3 eggs, beaten
1/2 stick butter, melted
1 tsp. vanilla
1/2 tsp. nutmeg
1 c. fresh coconut

TOPPING:

1/2 c. brown sugar
2 tbsp. flour
1/4 stick butter

Mix dry ingredients together. Then add pumpkin, eggs, butter, and vanilla. Mix well. Add coconut. Pour into unbaked pie shell. Take butter at room temperature and mix with brown sugar and flour until crumbly. Spread over pie filling and bake at 350 degrees until brown. Makes two 9 inch pies or 1 large deep dish 9 inch pie.
