7 - UP REFRIGERATOR BRAN MUFFINS 
2 c. 7-Up
2 c. 100% Bran cereal
3 c. all-purpose flour
2 c. whole wheat flour
4 c. Bran cereal
1 tbsp. + 2 tsp. baking soda
1 1/2 tsp. salt
1 2/3 c. sugar
2/3 c. firmly packed brown sugar
1 c. shortening
4 eggs, beaten
4 c. buttermilk

Combine 7-Up and 100% Bran cereal in a small bowl; let stand 10 minutes. Combine flours, All Bran cereal, soda and salt; set aside. Combine sugars and shortening in large mixing bowl, beat well. Add eggs, beat until smooth. Stir in buttermilk and 7-Up mixture. Add dry ingredients. Blend well.

To bake: Spoon batter into greased muffin cups, filling 2/3 full. Bake at 400 degrees for 15-20 minutes.

May be stored in refrigerator for up to 6 weeks.
