BANANA CREAM CAKE | |
1/2 c. shortening 2 c. sifted flour 1 1/3 c. granulated sugar 1 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/2 tsp. nutmeg 1 c. mashed bananas 1/4 c. milk 1 tsp. vanilla 2 eggs 1/2 c. chopped nuts Soften shortening, sift in dry ingredients. Add bananas, milk, and vanilla. Mix until flour is dampened, then beat vigorously for 2 minutes. Add eggs, beat 2 more minutes. Stir in nuts. Bake at 325 degrees for 30 to 35 minutes in a well-greased and floured 7 1/2 x 12 1/2 x 2 inch pan. BANANA CREAM CAKE FROSTING: 1 c. sour cream 1/3 c. brown sugar 1/4 c. broken nut meats Mix sour cream and brown sugar. Spread on warm cake in pan. Sprinkle with the nut meats. Bake 2 or 3 minutes or until frosting is set. |
