CHEESE CRACKERS 
1/3 c. milk
1 tbsp. vinegar
1 1/4 c. whole wheat flour
1/4 tsp. baking soda
1/2 c. wheat germ
1/2 c. butter
1/2 c. cheddar cheese, grated

Combine milk and vinegar and set aside. Combine remaining ingredients and knead until texture of cornmeal. Add sour milk and mix only enough to combine. Turn out on floured board and knead briefly. Roll 1/3" thick and cut into 2" squares. Place on cookie sheet and prick with fork. Bake at 350 degrees for 15 minutes.
