NO BAKE COOKIES 
1/4 c. cocoa
1/4 c. butter
2 c. sugar
1/2 c. milk (or evaporated milk)
1 c. peanut butter
1 tsp. vanilla
3 c. oatmeal

Combine sugar, milk, cocoa and butter in a saucepan. Bring to a boil and cook for 1 minute. Stir in peanut butter, vanilla and oatmeal. Beat until it loses its shine. Drop by teaspoonfuls onto waxed paper or aluminum foil. Let cool for 10 minutes. Makes 2 dozen cookies.

Note: You can leave out the cocoa and have peanut butter flavored cookies. You can also add some coconut to the oatmeal when you stir it in.

This can also be cooked in microwave. Put sugar, milk, cocoa and butter in microwave safe dish (Cornings' Vision Dutch Kettle is great for this) and cook on high for 10-15 minutes stirring 3 times. Cook only until mixture boils for 1 minute. Continue as it says above, after boiling for that 1 minute.

Since microwave ovens vary in power, you may need to adjust your cooking time.
