CHOCOLATE MINT SNOW-TOP COOKIES 
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 (10 oz.) pkg. (1 1/2 c.) Nestles Toll House mint chocolate morsels
6 tbsp. butter
1 c. sugar
1 1/2 tsp. vanilla
2 eggs
Confectioners sugar

Combine flour, baking powder and salt. Set aside. Over hot (not boiling) water, melt 1 cup mint chips, stir until smooth OR microwave morsels in bowl on HIGH power 1 minute. Stir. Microwave on HIGH 30 seconds longer. Stir until smooth.

Beat butter and sugar until creamy. Add melted mini-chips and vanilla. Beat in eggs. Gradually beat in flour mixture. Stir in remaining 1/2 cup mint chips. Wrap dough in plastic wrap and freeze until firm.

Preheat oven to 350 degrees. Shape dough into 1 inch balls. Coat (heavily) with confectioners sugar. Place on ungreased cookie sheet. Bake 10 to 12 minutes until tops crack. Let stand 5 minutes on sheet. Cool.

Since microwave ovens vary in power, you may need to adjust your cooking time.
