CHOCOLATE MINT SNOW-TOP COOKIES 
1 1/2 c. flour
1 1/2 tsp. baking powder
1 (12 oz.) pkg. semi-sweet chocolate chips, divided
6 tbsp. butter, softened
1 c. sugar
1 1/2 tsp. vanilla
1/2 tsp. peppermint extract
2 eggs
Confectioners' sugar

Combine flour and baking powder; set aside.

Melt 1 cup chocolate chips.

In large bowl, cream butter and sugar. Add melted chips, vanilla and mint. Beat in eggs. Add flour mixture and remaining chocolate chips. Wrap dough in plastic; freeze until firm. Form into 1 inch balls; roll in confectioners' sugar. Bake 350 degrees 8-10 minutes.
