RICE BALLS 
2 c. rice (must be Carolina)
4 eggs, separated
1/2 c. grated cheese
1/2 lb. cubed mozzarella cheese
1 c. bread crumbs
Oil for deep frying

Cook rice according to label directions. Fold in egg yolks and grated cheese. Shape into 1 inch balls placing a cube of the mozzarella cheese into center. Beat egg whites lightly. Roll balls into whites then into crumbs. Chill 1 hour. Deep fry until golden.
