RAISIN-SOUR CREAM PIE | |
9" baked pie shell 1 1/2 c. raisins plus 1 c. boiling water 3/4 c. sugar 3 eggs, beaten 2 tbsp. flour 1/4 tsp. (each) salt, cream of tartar 1 tsp. cinnamon 1/2 tsp. (each) cloves, vanilla 1 1/2 c. sour cream 3 egg-whites, beaten stiff 6 tbsp. sugar Soak raisins until tender; mix eggs, sugar, flour and sour cream and add to raisins; cook until thick, stirring constantly. Cool a bit; pour into shell; cover with meringue. Add cream of tartar to stiffly beaten egg-whites; gradually beat in sugar and flavoring. Pile meringue on pie sealing onto edges of crust to prevent weeping; bake 400 degrees for 8 to 10 minutes. Cut with knife dipped in water each time. |
