GARLICY GREEN BEANS | |
1 lb. green beans 1 sm. onion, chopped (1/3 c.) 2 tsp. minced garlic 2 tsp. oil 1 tbsp. flour 1 tsp. paprika 1 (16 oz.) can whole tomatoes, drained and coarsely chopped (save liquid) Steam green beans for 5 minutes, then quickly chill under cold water. Set aside. In a medium saucepan, saute onion and garlic in oil about 3 minutes. Stir in flour and paprika, cook 1 minute, then stir in reserved liquid from tomatoes. Cook mixture, stirring it, until slightly thickened. Add tomatoes and green beans. Cook mixture stirring it over medium heat about 2 minutes or until it is heated through and beans are tender crisp. |
