SPINACH AND BROCCOLI CASSEROLE | |
1 pkg. frozen spinach, chopped 1 pkg. frozen broccoli, chopped 1 can of mushroom or celery soup, undiluted 1/4 tsp. salt 1/8 tsp. tarragon (optional) 1/4 tsp. pepper 1 can French fried onion rings (Durkee's) 1/2 c. grated Cheddar cheese 2 med. size tomatoes, peeled and cut into 8 pieces each Cook the spinach and broccoli separately and drain each. Stir the seasonings into the undiluted soup, then add the spinach and broccoli. Pour into all into a shallow buttered (8x13 inch) baking dish. Arrange the onions and tomato pieces on top. Sprinkle on the cheese. Bake, uncovered, at 325 degrees for 35 minutes. Serves 6. (Even the kids like it.) |
