PUMPKIN MUFFINS 
2 c. sugar
1 1/2 c. canned pumpkin
3 eggs
1/2 c. vegetable oil
1/2 c. water
3 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3/4 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1 1/2 c. raisins
1 c. coarsely chopped toasted walnuts

Preheat oven to 400 degrees F.

In mixing bowl, combine sugar, pumpkin, eggs, oil and water.

In another bowl, sift together flour, baking powder, baking soda, salt and spices. Add to first mixture and blend well. Fold in raisins and walnuts.

Bake in greased muffin pans until toothpick or wire tester inserted in middle of muffin comes out clean, about 20 minutes.
