HEARTY PEA SALAD 
2 cans sm. peas, drained
1 sm. onion, minced
1/4 c. mayonnaise
4 hard boiled eggs
1/4 c. diced celery
Salt & pepper to taste
Lettuce leaves

Combine all the ingredients, except hard boiled eggs. Fold in mayonnaise, very easy, so as not to mash the peas. Serve on lettuce leaves that have been set in ice water for a few hours. Place extra egg slices on top or around mixture.
