FINNISH PANCAKE 
3 eggs
2 c. milk
1/4 c. honey or sugar
3/4 c. flour
1/2 tsp. salt
4 tbsp. butter
Fruit preserves

Beat eggs with milk. Stir in honey or sugar, flour and salt. Melt butter in oven-proof skillet until water sizzles in it. Add batter. Bake at 450 degrees for 25 to 30 minutes. Spread, hot from oven, with fruit preserves.
