SALMON PATTIES 
1 (15 oz.) can salmon
2 eggs
1/2 c. milk
1 pkg. (1/4 of box) saltines
Salt & pepper to taste

Take off black and skin on salmon. Remove skins if you dislike them. Add 2 beaten eggs, milk, salt and pepper. Crumb crackers and mix by fork with other ingredients. Form into patties. Fry in pan with butter until browned on both sides. Serve with butter melted on top if desired.
