SALMON CROQUETTES 
1 (15 or 16 oz.) can salmon
1/2 med. size onion
2 tbsp. green pepper
1 egg
8 unsalted saltines crumbled
1 c. bread crumbs
Oil for frying

Mix the first five ingredients together until well blended. Shape into balls and flatten. Roll in bread crumbs; fry until golden brown.
