BAKED SEAFOOD CASSEROLE | |
5 oz shrimp (boiled in Cajun seasoning), peel and chill 5 melba rounds, crushed (garlic flavor) 2 oz cottage cheese green onion chopped 1/2 celery stalk, chopped Dash of cayenne pepper 1/4 teaspoon parsley flakes 3 eggs, separated Mix 1/2 melba toast with 1/2 Tablespoon of milk. Set aside. Beat egg yolks. Add melba mixture. Add shrimp, cottage cheese, onion, celery, cayenne pepper, parsley and salt. Beat egg whites stiff and fold into shrimp mixture. Spray baking dish heavily with pam. Sprinkle top with paprika and parsley flakes. Bake 1 hour or more until set. This is a single serving recipe. |
