SALAMI 
5 lbs. hamburger
5 tsp. Morton Tender Quick Salt
1 tbsp. hickory smoke salt
2 1/2 tsp. garlic salt or 1 1/4 tsp. garlic powder
2 1/2 tsp. mustard seed
2 1/2 tsp. black pepper

All measurements round full.

Mix all ingredients and knead 10 minutes. Cover and refrigerate 3 days. Knead daily for 1 minute and return to refrigerator. The fourth day make into 4 rolls, 3" in diameter. Bake 8 hours at 140 degrees. Bake on wire rack. Turn 1/4 turn every 2 hours. Cool before slicing. Can also be frozen.
