SUMMER SALAMI 
6 lb. hamburger
8 tsp. Morton Tender quick salt
4 tsp. cracked black pepper corn
4 tsp. mustard seed
4 tsp. Hickory Smoked salt
4 tsp. garlic salt or garlic powder
1 tsp. crushed red pepper (optional)

Mix all ingredients well. Cover and put in refrigerator for 24 hours. On 2nd day repeat mixing. On 3rd day shape into rolls. On 4th day bake on wire rack for 10 hours at 170 degrees, turning 1/4 turn every 2 hours. Then cool.
