FRUITED POTATO SALAD | |
1 can pineapple chunks 2 c. diced cooked potatoes 4 hard-cooked eggs, chopped 2 red apples, diced 1/2 c. chopped celery 1/2 c. chopped sweet pickles 1/2 c. mayonnaise Salt and pepper to taste Drain pineapple thoroughly. Combine the pineapple, potatoes, eggs, apples, celery and pickles; mix lightly. Add the mayonnaise, salt and pepper; mix well to coat ingredients. Chill until ready to serve. Yield: 6 servings. |
