CREAM CHEESE MINIATURE FRUIT PIES | |
2 lg. pkgs. cream cheese, softened 2 eggs 2 tsp. vanilla 1/2 c. sugar 1 box vanilla wafers 1 can cherry pie filling 1 pkg. sm. or miniature foil baking cups (or midget ones) In mixer, blend cream cheese, eggs, vanilla and sugar until smooth and completely blended. Preheat oven to 375 degrees. On large cookie sheets, place about 20 or 24 (depending on size of cup you use) foil baking cups. Into each place one vanilla wafer. Spoon cream cheese mixture on top to 3/4 full. Bake for about 12 to 15 minutes. Cool and then spoon 1 or 2 cherries on top. Refrigerate these. |
