FRENCH QUARTER STEAK 
1 lb. boneless round steak
1/4 c. flour
1 tsp. salt
1 tsp. paprika
1/2 tsp. pepper
3/4 c. chopped onion
1/2 c. chopped green pepper
2 tbsp. vegetable oil
1/2 c. uncooked regular rice
1 (28 oz.) can tomatoes, undrained
1 c. water

Trim excess fat from steak. Cut into serving size pieces. Combine flour, salt, paprika and pepper. Dredge steak in flour mixture, reserving excess flour mixture.

Saute onion and green pepper in hot oil in large skillet, remove vegetables and set aside. Brown steak on both sides in remaining oil. Add sauteed vegetables, rice, tomatoes and water. Sprinkle with reserved flour mixture. Cover and simmer 1 hour, stirring occasionally. 4-6 servings.
