FRENCH RAISIN TOAST 
2 slices whole wheat raisin bread
2 egg whites
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 c. apple juice or rice milk
2 tbsp. apple juice concentrate

In shallow bowl, beat egg whites together with other ingredients. Dip both sides of bread in batter until soaked with mixture. Spray griddle with non-stick spray; brown on both sides. Serve with fruit topping or apple butter.
