BEEF STIR FRY 
2-3 lbs. lean beef
2 ribs celery
1 lg. onion
1 bell pepper
2 carrots
1 c. sliced mushrooms
1 c. snow peas or shelled garden peas
2 c. fresh spinach or other greens (any other vegetable may be substituted for these)
Soy sauce
Ground black pepper
Cooked rice or noodles

Slice beef into thin 3 inch long slices against the grain. Place in bowl, sprinkle with approximately 1 teaspoon pepper and 1/2 cup soy sauce, toss to coat meat evenly. Marinate at least 1 hour. In the meantime prepare vegetables. Thinly slice celery and carrots, slice, dice, or mince onions, slice pepper into slices or rings, coarse slice greens and leave snow peas whole.

Heat wok or deep frying pan, add 2-3 tablespoons cooking oil. Fry meat a little at a time stirring constantly. Add slowest cooking vegetables such as carrots first, finish with greens. Pour any remaining marinade in the pan and thicken juice if desired. Serve hot on rice or noodles.
