BEEF SALAD STIR-FRY 
1/3 c. lime juice
1 tbsp. brown sugar
1 tbsp. soy sauce
1 tsp. dried basil
3/4 tsp. dried mint
1 jalapeno pepper, minced
2 garlic cloves, minced
1/4 tsp. ground ginger
1/2 lb. boneless sirloin steak, thinly sliced
1 large sweet red pepper, chopped fine
1/2 medium cucumber, chopped
6 c. torn mixed salad greens

Combine lime juice, sugar, soy sauce, basil and mint; set aside. In a medium nonstick skillet, coated with nonstick cooking spray, sauté jalapeno, garlic and ginger for 30 seconds. Add beef slices; stir-fry until desired doneness. Remove from heat; add red peppers and cucumber and toss gently. Place greens on serving platter and top with beef mixture. Add dressing to a pan and bring to a boil, then drizzle over beef.

Don't forget to protect your hands from jalapeno.
