BROCCOLI - BLEU CHEESE CASSEROLE 
20 oz. pkg. chopped broccoli
2 tbsp. butter
2 tbsp. flour
1/2 c. milk
1/2 c. half and half
1/4 tsp. salt
1/8 tsp. pepper
1 (3 oz.) pkg. cream cheese, softened
1/2 c. crumbled bleu cheese
Croutons

Cook broccoli; drain and set aside. Melt butter over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk and half and half and cook over medium heat, stirring constantly until thick.

Add salt, pepper, cream cheese (which has been softened and cubed), and crumbled bleu cheese. Stir until cheese is melted. Add broccoli and turn into greased 10 x 6 x 2 baking dish. Cover and refrigerate.

Before baking let stand 30 minutes out of refrigerator. Sprinkle croutons on top; bake uncovered at 350 degrees 25-30 minutes. Serves 6-8.
