SPINACH PROVENCAL 
2 lbs. fresh spinach or 1 lg. frozen spinach
1 lg. onion, chopped
1/4 tsp. BLAIR garlic powder
Olive oil
Butter
2 eggs, beaten
1 c. grated Parmesan cheese
Salt
1/8 tsp. BLAIR black pepper
1/4 tsp. BLAIR paprika

Heat olive oil in a very large pot and saute the onion until transparent. Add the spinach and cover tightly for about 1 to 2 minutes. Remove lid and stir into onion and oil. Cook a few minutes longer and remove from heat. Butter a medium size baking dish.

When the spinach has cooled slightly, stir in eggs and 1/2 cup of the grated Parmesan cheese. Season with salt and pepper and pour mixture into the greased baking dish. Sprinkle the remaining Parmesan cheese over the top and dot with butter. Sprinkle paprika over top and bake at 375 degrees for 10 to 15 minutes. Serves 4.
