EASY NOODLE CASSEROLE 
1 lb. ground beef or turkey
1 c. chopped onion
2 cloves garlic, minced
3 1/2 c. (28 oz. can) crushed tomatoes in puree
1 tsp. oregano, crushed
3/4 tsp. salt
1/4 tsp. pepper
1 1/2 thinly sliced zucchini
4 oz. (1 1/2 c. dry) wide egg noodles, cooked and drained
1 c. (4 oz.) shredded Cheddar (divided into 2 portions)

In large skillet brown beef or turkey with onion in garlic. Drain fat. Mix in tomato, oregano, salt, pepper. Simmer 10 minutes, stirring occasionally. Mix in zucchini, cook an additional 10 minutes. Blend in noodles in 12 x 7 inch baking dish. Layer 1/2 meat, 1/2 cheese, repeat.

Bake at 350°F, 15 to 20 minutes.
