LEMON CAKE WITH RICOTTA 
1 lemon cake mix
3 eggs
1 c. powdered sugar
2 lbs. Ricotta cheese

Prepare lemon cake mix according to directions. Place batter in greased and floured 9 x 13 inch (or larger) pan. Beat in bowl 3 eggs and 1 cup powdered sugar. Add Ricotta cheese. Spoon cheese mixture over cake batter evenly. Bake at 350 degrees for 1 hour or more. You may wish to lower heat for glass pan.
